Ingredients:
- 1.3kg frozen tater tots
- 225g shredded cheddar cheese
- 225g shredded Monterey Jack cheese
- 450g ground beef
- 1 medium yellow onion, finely chopped
- 1 green bell pepper, finely chopped
- 1 packet taco seasoning
- 120ml water
- 230g sour cream
- 2-3 Roma tomatoes, diced
- 1/2 bunch green onions, thinly sliced
- 1 jalapeno, thinly sliced (optional)
- Avocado slices or guacamole
- Black olives, sliced
- Salsa
Instructions:
- Preheat oven according to tater tot package instructions. Spread tater tots in a single layer on the baking sheet. Bake until golden brown and crispy, flipping halfway through (usually around 20 minutes).
- While the tots are baking, brown the ground beef in a skillet over medium-high heat. Drain off any excess grease using a colander or strainer.
- Add the chopped onion and bell pepper to the skillet with the cooked beef. Cook until softened, about 5 minutes.
- Stir in the taco seasoning and water. Simmer for 5 minutes, or until the sauce has thickened slightly.
- Remove the tater tots from the oven. Sprinkle both cheeses evenly over the tater tots.
- Return the baking sheet to the oven and bake until the cheese is melted and bubbly, about 3-5 minutes. Watch carefully to prevent burning.
- Remove from the oven and top with the seasoned ground beef mixture and your desired toppings.
- Serve hot and watch them disappear!
