Ingredients:

  • 1.3kg frozen tater tots
  • 225g shredded cheddar cheese
  • 225g shredded Monterey Jack cheese
  • 450g ground beef
  • 1 medium yellow onion, finely chopped
  • 1 green bell pepper, finely chopped
  • 1 packet taco seasoning
  • 120ml water
  • 230g sour cream
  • 2-3 Roma tomatoes, diced
  • 1/2 bunch green onions, thinly sliced
  • 1 jalapeno, thinly sliced (optional)
  • Avocado slices or guacamole
  • Black olives, sliced
  • Salsa

Instructions:

  1. Preheat oven according to tater tot package instructions. Spread tater tots in a single layer on the baking sheet. Bake until golden brown and crispy, flipping halfway through (usually around 20 minutes).
  2. While the tots are baking, brown the ground beef in a skillet over medium-high heat. Drain off any excess grease using a colander or strainer.
  3. Add the chopped onion and bell pepper to the skillet with the cooked beef. Cook until softened, about 5 minutes.
  4. Stir in the taco seasoning and water. Simmer for 5 minutes, or until the sauce has thickened slightly.
  5. Remove the tater tots from the oven. Sprinkle both cheeses evenly over the tater tots.
  6. Return the baking sheet to the oven and bake until the cheese is melted and bubbly, about 3-5 minutes. Watch carefully to prevent burning.
  7. Remove from the oven and top with the seasoned ground beef mixture and your desired toppings.
  8. Serve hot and watch them disappear!
