Ingredients:

  • 2 cups (240g) pre-cooked cornmeal (arepa flour, e.g., P.A.N.)
  • 2 1/2 cups (600ml) warm water
  • 1 teaspoon (5g) salt
  • 1 tablespoon (15ml) vegetable oil (for cooking)
  • 1 cup (25g) fresh cilantro leaves, packed
  • 1/2 cup (120ml) Greek yogurt or sour cream
  • Juice of 1 lime (about 2 tablespoons/30ml)
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions:

  1. In a mixing bowl, combine the pre-cooked cornmeal and salt.
  2. Gradually add warm water while mixing with your hands until a soft dough forms.
  3. Let the dough rest for 5 minutes, covered with plastic wrap or a damp cloth.
  4. Divide the dough into 6 equal portions (about 2-3 tablespoons each).
  5. Shape each portion into a patty, approximately 1/2-inch thick.
  6. Heat vegetable oil in a skillet over medium heat.
  7. Place arepas in the skillet and cook for 4-5 minutes on each side until golden brown and crispy.
  8. In a food processor, combine cilantro, Greek yogurt, lime juice, minced garlic, salt, and pepper.
  9. Blend until smooth and creamy; adjust seasoning as needed.
  10. Slice open each arepa and fill with desired fillings (cheese, avocado, etc.).
  11. Serve with zesty cilantro sauce drizzled on top or on the side.
