Ingredients:
- 2 cups (240g) pre-cooked cornmeal (arepa flour, e.g., P.A.N.)
- 2 1/2 cups (600ml) warm water
- 1 teaspoon (5g) salt
- 1 tablespoon (15ml) vegetable oil (for cooking)
- 1 cup (25g) fresh cilantro leaves, packed
- 1/2 cup (120ml) Greek yogurt or sour cream
- Juice of 1 lime (about 2 tablespoons/30ml)
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions:
- In a mixing bowl, combine the pre-cooked cornmeal and salt.
- Gradually add warm water while mixing with your hands until a soft dough forms.
- Let the dough rest for 5 minutes, covered with plastic wrap or a damp cloth.
- Divide the dough into 6 equal portions (about 2-3 tablespoons each).
- Shape each portion into a patty, approximately 1/2-inch thick.
- Heat vegetable oil in a skillet over medium heat.
- Place arepas in the skillet and cook for 4-5 minutes on each side until golden brown and crispy.
- In a food processor, combine cilantro, Greek yogurt, lime juice, minced garlic, salt, and pepper.
- Blend until smooth and creamy; adjust seasoning as needed.
- Slice open each arepa and fill with desired fillings (cheese, avocado, etc.).
- Serve with zesty cilantro sauce drizzled on top or on the side.
