Ingredients:

  • 4-5 Scotch bonnet peppers, stems removed (approx. 90-100 g)
  • 1 cup (240 ml) apple cider vinegar
  • 2 tablespoons (30 ml) freshly squeezed lime juice (about 1 lime)
  • 1 tablespoon (15 g) sugar
  • 1 teaspoon (5 g) salt
  • 1/2 teaspoon (2 g) ground allspice
  • 2 cloves garlic, minced
  • 1 small onion, chopped (about 75 g)

Instructions:

  1. Rinse the scotch bonnet peppers and remove stems. Chop the onion and mince the garlic.
  2. In a blender or food processor, combine the scotch bonnet peppers, apple cider vinegar, lime juice, sugar, salt, allspice, garlic, and onion. Blend until smooth, scraping down the sides as necessary.
  3. Transfer the blended mixture to a saucepan. Heat over medium heat for about 5 minutes, stirring occasionally.
  4. Remove from heat and let it cool before transferring to a jar. Store in the refrigerator for up to two weeks.
