Ingredients:
- 4-5 Scotch bonnet peppers, stems removed (approx. 90-100 g)
- 1 cup (240 ml) apple cider vinegar
- 2 tablespoons (30 ml) freshly squeezed lime juice (about 1 lime)
- 1 tablespoon (15 g) sugar
- 1 teaspoon (5 g) salt
- 1/2 teaspoon (2 g) ground allspice
- 2 cloves garlic, minced
- 1 small onion, chopped (about 75 g)
Instructions:
- Rinse the scotch bonnet peppers and remove stems. Chop the onion and mince the garlic.
- In a blender or food processor, combine the scotch bonnet peppers, apple cider vinegar, lime juice, sugar, salt, allspice, garlic, and onion. Blend until smooth, scraping down the sides as necessary.
- Transfer the blended mixture to a saucepan. Heat over medium heat for about 5 minutes, stirring occasionally.
- Remove from heat and let it cool before transferring to a jar. Store in the refrigerator for up to two weeks.
