Ingredients:
- 2 lbs Rutabaga, peeled and cubed
- 2 tablespoons Olive Oil
- 1/2 teaspoon Salt
- 1/4 teaspoon Black Pepper
- 2 sprigs Fresh Sage, leaves chopped
- 6 slices Thick-Cut Bacon
- 2 tablespoons Maple Syrup
- 1 tablespoon Apple Cider Vinegar
- 1/4 teaspoon Red Pepper Flakes (optional)
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper if desired.
- Toss the cubed rutabaga with olive oil, salt, pepper, and chopped sage in a large bowl.
- Spread the rutabaga in a single layer on the prepared baking sheet. Roast for 30 minutes, flipping halfway through, until tender and lightly browned.
- While the rutabaga is roasting, cook the bacon in a large skillet over medium heat until crispy. Remove bacon from skillet and place on paper towels to drain excess fat. Reserve 1 tablespoon of bacon fat in the skillet.
- In a small bowl, whisk together maple syrup, apple cider vinegar, and red pepper flakes (if using).
- Crumble or roughly chop the cooked bacon. Return the crumbled bacon to the skillet with the reserved bacon fat. Pour the maple glaze over the bacon and cook for 2-3 minutes, stirring constantly, until the glaze thickens slightly and coats the bacon.
- Remove the rutabaga from the oven. Transfer it to the skillet with the maple-glazed bacon. Toss to combine. Serve immediately.
