Ingredients:

  • 2 lbs Rutabaga, peeled and cubed
  • 2 tablespoons Olive Oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 2 sprigs Fresh Sage, leaves chopped
  • 6 slices Thick-Cut Bacon
  • 2 tablespoons Maple Syrup
  • 1 tablespoon Apple Cider Vinegar
  • 1/4 teaspoon Red Pepper Flakes (optional)

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper if desired.
  2. Toss the cubed rutabaga with olive oil, salt, pepper, and chopped sage in a large bowl.
  3. Spread the rutabaga in a single layer on the prepared baking sheet. Roast for 30 minutes, flipping halfway through, until tender and lightly browned.
  4. While the rutabaga is roasting, cook the bacon in a large skillet over medium heat until crispy. Remove bacon from skillet and place on paper towels to drain excess fat. Reserve 1 tablespoon of bacon fat in the skillet.
  5. In a small bowl, whisk together maple syrup, apple cider vinegar, and red pepper flakes (if using).
  6. Crumble or roughly chop the cooked bacon. Return the crumbled bacon to the skillet with the reserved bacon fat. Pour the maple glaze over the bacon and cook for 2-3 minutes, stirring constantly, until the glaze thickens slightly and coats the bacon.
  7. Remove the rutabaga from the oven. Transfer it to the skillet with the maple-glazed bacon. Toss to combine. Serve immediately.
