Ingredients:
- 1 pound Italian sausage (sweet or spicy, your choice)
- 2 tablespoons olive oil
- 2 medium bell peppers, sliced
- 1 large onion, sliced
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- ½ teaspoon crushed red pepper flakes (optional)
- Salt to taste
- Pepper to taste
- Fresh basil or parsley (optional, for garnish)
Instructions:
- Slice the sausage, bell peppers, and onion; mince the garlic.
- Heat olive oil in a large skillet over medium heat. Add the sausage, breaking it up with a spatula. Cook until browned and cooked through, about 6-8 minutes.
- Remove the cooked sausage from the skillet and set aside. In the same skillet, add sliced onions and bell peppers. Cook for 5-7 minutes until softened.
- Stir in garlic, oregano, and crushed red pepper flakes, cooking for an additional 2 minutes until fragrant.
- Return the sausage to the skillet, stirring to incorporate with the vegetables. Season with salt and pepper to taste.
- Transfer to plates and garnish with fresh herbs, if desired.
