Ingredients:

  • 1 pound Italian sausage (sweet or spicy, your choice)
  • 2 tablespoons olive oil
  • 2 medium bell peppers, sliced
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon crushed red pepper flakes (optional)
  • Salt to taste
  • Pepper to taste
  • Fresh basil or parsley (optional, for garnish)

Instructions:

  1. Slice the sausage, bell peppers, and onion; mince the garlic.
  2. Heat olive oil in a large skillet over medium heat. Add the sausage, breaking it up with a spatula. Cook until browned and cooked through, about 6-8 minutes.
  3. Remove the cooked sausage from the skillet and set aside. In the same skillet, add sliced onions and bell peppers. Cook for 5-7 minutes until softened.
  4. Stir in garlic, oregano, and crushed red pepper flakes, cooking for an additional 2 minutes until fragrant.
  5. Return the sausage to the skillet, stirring to incorporate with the vegetables. Season with salt and pepper to taste.
  6. Transfer to plates and garnish with fresh herbs, if desired.
