Ingredients:

  • 1 whole-grain bagel (85g)
  • 2 tbsp light cream cheese (30g)
  • 1 tsp fresh dill, finely chopped (2g)
  • 3 oz smoked salmon (85g), thinly sliced
  • 5 slices English cucumber (20g)
  • 4 rings red onion (10g)
  • 1 tsp non-pareil capers (5g), drained
  • 1 tsp fresh lemon juice (5ml)
  • 1/4 tsp cracked black pepper

Instructions:

  1. Slice the bagel in half horizontally. In a small bowl, whip the light cream cheese with fresh dill and black pepper until aerated and fragrant.
  2. Place the bagel halves in a toaster or toaster oven. Toast until the edges are mahogany-colored and the center is golden-brown.
  3. Spread the herb cream cheese mixture generously over both toasted bagel halves. Place cucumber slices directly onto the cream cheese to seal in moisture.
  4. Drape the smoked salmon slices over the cucumbers. Top with red onion rings and capers. Finish with a squeeze of fresh lemon juice and optional lemon zest.
