Ingredients:
- 1 whole-grain bagel (85g)
- 2 tbsp light cream cheese (30g)
- 1 tsp fresh dill, finely chopped (2g)
- 3 oz smoked salmon (85g), thinly sliced
- 5 slices English cucumber (20g)
- 4 rings red onion (10g)
- 1 tsp non-pareil capers (5g), drained
- 1 tsp fresh lemon juice (5ml)
- 1/4 tsp cracked black pepper
Instructions:
- Slice the bagel in half horizontally. In a small bowl, whip the light cream cheese with fresh dill and black pepper until aerated and fragrant.
- Place the bagel halves in a toaster or toaster oven. Toast until the edges are mahogany-colored and the center is golden-brown.
- Spread the herb cream cheese mixture generously over both toasted bagel halves. Place cucumber slices directly onto the cream cheese to seal in moisture.
- Drape the smoked salmon slices over the cucumbers. Top with red onion rings and capers. Finish with a squeeze of fresh lemon juice and optional lemon zest.
