Ingredients:

  • 1 pound (454g) Italian sausage, casings removed
  • 1 medium apple (Granny Smith or Honeycrisp preferred), peeled, cored, and finely diced
  • 1/4 cup (30g) finely chopped onion
  • 2 tablespoons finely chopped fresh sage leaves
  • 1/4 teaspoon freshly ground black pepper
  • 1 package (14-17 ounces/397-482g) frozen puff pastry, thawed according to package directions
  • 1 large egg, beaten
  • 1 tablespoon milk or water
  • Everything bagel seasoning, sesame seeds, or poppy seeds (optional)

Instructions:

  1. Brown the sausage in a skillet, breaking it up with a spoon. Drain excess grease.
  2. Stir in the diced apple, onion, sage, and pepper. Cook until the apple is slightly softened. Remove from heat and let cool slightly.
  3. Unfold the thawed puff pastry on a lightly floured surface.
  4. Spread the sausage mixture evenly over the puff pastry.
  5. Roll the puff pastry tightly into a log. Use a pizza cutter to slice the log into approximately 1-inch thick rounds.
  6. Place the rounds on a baking sheet lined with parchment paper. Brush with egg wash. Sprinkle with desired garnish (optional).
  7. Bake in a preheated oven until golden brown and the pastry is puffed.
