Ingredients:
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 pound cooked chicken, shredded
- 4 cups chicken broth
- 1 cup buffalo wing sauce
- 1 cup heavy cream
- Salt and pepper, to taste
- Crumbled blue cheese, for garnish (optional)
- Chopped green onions, for garnish
- Celery sticks, for serving
Instructions:
- Heat olive oil in the pot over medium heat.
- Sauté diced onion, garlic, carrots, and celery until softened, about 5-7 minutes.
- Add shredded chicken to the pot.
- Pour in the chicken broth and buffalo wing sauce, stirring to combine.
- Bring the mixture to a boil, then reduce heat and simmer for 15 minutes.
- Stir in heavy cream, season with salt and pepper, and heat through.
- Serve hot, garnished with blue cheese and chopped green onions.
