Ingredients:

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 pound cooked chicken, shredded
  • 4 cups chicken broth
  • 1 cup buffalo wing sauce
  • 1 cup heavy cream
  • Salt and pepper, to taste
  • Crumbled blue cheese, for garnish (optional)
  • Chopped green onions, for garnish
  • Celery sticks, for serving

Instructions:

  1. Heat olive oil in the pot over medium heat.
  2. Sauté diced onion, garlic, carrots, and celery until softened, about 5-7 minutes.
  3. Add shredded chicken to the pot.
  4. Pour in the chicken broth and buffalo wing sauce, stirring to combine.
  5. Bring the mixture to a boil, then reduce heat and simmer for 15 minutes.
  6. Stir in heavy cream, season with salt and pepper, and heat through.
  7. Serve hot, garnished with blue cheese and chopped green onions.
