Ingredients:

  • 1 cup (90g) old-fashioned rolled oats
  • 2 cups (480ml) water
  • 1/2 tsp (3g) ground cinnamon
  • 1/4 tsp (1.5g) fine sea salt
  • 1/2 cup (120g) plain Greek yogurt
  • 1 tbsp (21g) maple syrup
  • 1 tsp (5ml) pure vanilla extract

Instructions:

  1. Combine the rolled oats, water, cinnamon, and salt in a small saucepan.
  2. Bring the mixture to a gentle boil over medium-high heat, then reduce to a simmer.
  3. Stir occasionally for 5–7 minutes until the liquid is mostly absorbed and the oats smell nutty and fragrant.
  4. Turn off the heat entirely and move the pan to a cool burner to prevent the yogurt from curdling.
  5. Stir in the vanilla extract and maple syrup.
  6. Fold in the Greek yogurt gently, stirring until the mixture is uniform and velvety.
