Ingredients:

  • 3 cups (450 g) cooked, shredded chicken breast
  • 2 blocks (8 oz each, 450 g) full-fat Cream Cheese, cubed and softened
  • 3/4 cup (180 ml) Buffalo Hot Sauce (Frank's RedHot is traditional)
  • 1/2 cup (120 ml) Ranch Dressing, full-fat (or Blue Cheese Dressing)
  • 1 teaspoon (5 ml) Garlic Powder
  • 1/2 teaspoon (2.5 ml) Black Pepper
  • 1 1/2 cups (180 g) shredded Monterey Jack or Cheddar Blend, divided
  • 1/4 cup (30 g) Blue Cheese Crumbles (optional, for garnish)
  • 2 Tablespoons fresh Chives or Green Onions, chopped (optional, for garnish)

Instructions:

  1. Prepare the Slow Cooker: Lightly grease the inside of the slow cooker pot or use a slow cooker liner for easier cleanup.
  2. Add Ingredients: Place the shredded chicken, cubed cream cheese, buffalo hot sauce, ranch dressing, garlic powder, and black pepper into the base of the slow cooker.
  3. Initial Mix: Give the ingredients a very light initial stir just to ensure the cream cheese is semi-submerged in the liquid.
  4. Cook and Melt: Cover the slow cooker and cook on LOW for 1.5 hours or on HIGH for 45 minutes. The goal is to fully melt the cream cheese and heat the chicken through.
  5. Stir for Creaminess: Once the cream cheese is completely soft, remove the lid and stir the mixture vigorously until it is fully smooth, creamy, and uniform. Ensure there are no lingering lumps of cream cheese.
  6. Incorporate the Cheese: Stir in 1 cup (120 g) of the shredded cheddar/Monterey Jack blend until it is fully melted into the dip, making the mixture extra thick and gooey.
  7. Top and Finish: Spread the dip evenly in the slow cooker bowl. Sprinkle the remaining 1/2 cup (60 g) of shredded cheese evenly over the top.
  8. Heat the Top: Replace the lid and cook on LOW for another 10–15 minutes (or until the topping cheese is fully melted and bubbling).
  9. Garnish and Serve: Switch the slow cooker to the KEEP WARM setting. Garnish with optional blue cheese crumbles and chopped chives/green onions just before serving. Serve directly from the slow cooker for maximum heat retention.
