Ingredients:

  • 1 lb (450 g) ground beef or ground turkey
  • 1 tbsp (15 ml) olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 packet (1 oz / 28 g) taco seasoning mix or homemade blend: 1 tsp chili powder, ½ tsp cumin, ½ tsp paprika, ¼ tsp oregano, salt and pepper to taste
  • ½ cup (120 ml) water
  • 4 standard-size Fritos or Doritos snack bags (about 2 oz / 56 g each)
  • 1 cup (115 g) shredded cheddar cheese or Mexican blend cheese
  • 1 cup (150 g) cherry tomatoes, quartered
  • ½ cup (120 g) canned black beans, rinsed and drained
  • ½ cup (120 g) corn kernels (fresh, frozen and thawed, or canned)
  • ½ cup (120 ml) sour cream or Greek yogurt
  • ¼ cup (15 g) chopped fresh cilantro
  • 1 small lime, quartered
  • Optional: sliced jalapeños, chopped green onions, sliced black olives

Instructions:

  1. Heat olive oil in skillet over medium heat.
  2. Add chopped onions; cook until translucent, about 3-4 minutes.
  3. Add garlic; cook for 30 seconds until fragrant.
  4. Add ground beef; cook until browned and cooked through, about 7-8 minutes, breaking up with spatula.
  5. Stir in taco seasoning and water. Simmer until liquid reduces and thickens, about 3-4 minutes. Remove from heat.
  6. If desired, briefly warm sealed chip bags in a low oven at 200°F (93°C) for 5 minutes to enhance crunch. Do not overheat to avoid melting the bag.
  7. Carefully open each chip bag and gently crush some chips for bite-sized pieces.
  8. Spoon a generous amount of seasoned meat filling into each bag over chips.
  9. Sprinkle shredded cheese over the hot meat so it melts slightly.
  10. Top with black beans, corn, cherry tomatoes, and any optional toppings.
  11. Add a dollop of sour cream and sprinkle fresh cilantro on top.
  12. Squeeze lime juice over everything to brighten flavors.
  13. Serve immediately with a fork or spoon for easy eating directly from the bag.
