Ingredients:

  • 6 tablespoons (90ml) extra virgin olive oil
  • 2 tablespoons (30ml) red wine vinegar
  • 2 tablespoons (30ml) fresh lemon juice
  • 1 teaspoon (5ml) dried oregano
  • 1/2 teaspoon (2.5ml) Dijon mustard
  • 1/4 teaspoon (1.25ml) garlic powder
  • 1/4 teaspoon (1.25ml) sea salt
  • 1/8 teaspoon (0.625ml) black pepper

Instructions:

  1. In a small bowl, add olive oil, red wine vinegar, lemon juice, dried oregano, Dijon mustard, garlic powder, salt, and pepper.
  2. Vigorously whisk all ingredients together until well combined and emulsified.
  3. Taste the dressing and adjust seasonings as needed. Add more salt and pepper for a stronger flavor, or more lemon juice for extra zing.
  4. Immediately drizzle over your Greek salad. Or, transfer the dressing to an airtight container or jar and store in the refrigerator.
