Ingredients:
- 6 tablespoons (90ml) extra virgin olive oil
- 2 tablespoons (30ml) red wine vinegar
- 2 tablespoons (30ml) fresh lemon juice
- 1 teaspoon (5ml) dried oregano
- 1/2 teaspoon (2.5ml) Dijon mustard
- 1/4 teaspoon (1.25ml) garlic powder
- 1/4 teaspoon (1.25ml) sea salt
- 1/8 teaspoon (0.625ml) black pepper
Instructions:
- In a small bowl, add olive oil, red wine vinegar, lemon juice, dried oregano, Dijon mustard, garlic powder, salt, and pepper.
- Vigorously whisk all ingredients together until well combined and emulsified.
- Taste the dressing and adjust seasonings as needed. Add more salt and pepper for a stronger flavor, or more lemon juice for extra zing.
- Immediately drizzle over your Greek salad. Or, transfer the dressing to an airtight container or jar and store in the refrigerator.
